What Does the 7-Up Do in the Cake?

The 7-Up in this cake is used as both added liquid needed for consistency but also works to help raise the batter creating a lighter texture.   • Whipped cream, whipped topping, or whipped coconut cream.
  • Sliced strawberries, blueberries, raspberries, or blackberries in syrup.

If you prefer or don't have a bundt pan, you can make this in any traditional cake pan. A 9"x13" cake pan is a great choice for easy servings, but any cake pan can work. I have even used this recipe to make a layered cake with a simple vanilla buttercream between layers. It's bright, easy, and a great choice for parties.

You can even divide this batter in cupcake liners to create a super moist and delicious cupcake. Top with icing or serve as is for a great treat that is easy and better than most bakery cupcakes you might otherwise purchase.

How to Make a Cake Mix 7-Up Cake

Preheat the oven to 325°F and spray a bundt pan with non-stick cooking spray.

In a large bowl, combine the cake mix, pudding mix, eggs, oil, lemon juice, lemon zest, and soda.

How to Make a Lemon Glaze

In a small bowl, mix together the powdered sugar and lemon juice.

Slowly add the milk into the mixture whisking until you have the desired consistency. Add additional milk by the tablespoonful until happy with the glaze.

Pour or pipe onto the prepared cake and top with additional lemon zest if desired.
